Gooey Chocolate Fondants

There are few people in this world who can resist a bit of chocolate, myself not included. While it's not necessarily the best on the waistline, I can't get enough of the sweet stuff. It makes for the perfect treat to cure a sweet-tooth, so what better than to chuck some in a gooey, melty pudding?





This pud only has a few ingredients, and to the untrained eye looks easy to make. However perfecting these fondants is a skill every foodie wants in their cookery CV. Take them out a couple of minutes too soon and you've got cake batter, leave them in a couple of minutes too late and you've got a sponge. When you get them right, however, they are one of the most show-stopping desserts around and will dazzle all, from family to dinner party guests. Interested? Here's how to make these chocolatey delights.

Serves: 4      Cook at: 200ºC   Time: 15 mins prep, 12 minutes cooking



Ingredients

100g dark chocolate
100g baking spread or margarine
150g light soft brown sugar
3 eggs
1/2 tsp vanilla extract
50g plain flour

1 tbsp margarine to butter the ramekins
2 tbsp cocoa powder to dust the ramekins


Method

1. Preheat your oven to 200ºC. Butter the ramekins, the dust them by putting a tsp of cocoa powder in, swishing it about (making sure all the butter is covered), then tapping out the excess powder.


2. Break the chocolate up, then melt it with the butter in a glass bowl over a pan of boiling water. Alternatively, you could melt them in the microwave. Leave to cool for 5 minutes.


3. Mix the sugar into the melted chocolate, then add the eggs one at a time. Tip in the vanilla extract, then sift in the flour, making sure everything is mixed in well.


4. Pour the mixture evenly between the 4 ramekins, then place the ramekins onto a baking tray. Place this tray in the oven and bake the puddings for between 10 and 12 minutes (precisely!). Don't be fooled into leaving them in longer because the tops don't look 'done'; as long as they are fairly firm take the puddings out.


5. Using a knife, loosen the pudding from the side of the ramekin. Put the ramekin upside down on a plate, tip the pudding out, then quickly flip it over so it's standing upright. You can always leave the pudding in the ramekin if you don't fancy this fuss!

You can serve this pudding with cream, ice cream, a dusting of icing sugar, just on its own, or with whatever else takes your fancy! It's quite a heavy, rich pudding but delicious nonetheless.
