Coconut & White Chocolate Cupcakes

I made these white chocolate and coconut cupcakes the other day as part of my continuing recipe experimentation. I didn't think they would be but these cakes are really sickly...maybe I put too much chocolate in them! The recipe makes 12 cupcakes.





Ingredients:
  • 100g margarine
  • 100g caster sugar
  • 2 eggs
  • 100g self-raising flour
  • 50g white chocolate (melted and left to cool)
  • 45-50g dessicated coconut
For the icing:
  • 75g margarine
  • 225g icing sugar
  • 100g white chocolate (melted and cooled)
  • 10g dessicated coconut for decoration 

Pre-heat the oven to 180ÂșC.

Cream the margarine and sugar until pale and fluffy, then add the two eggs and mix.

Sift in the self-raising flour and mix gently until it's all combined well.


Pour in all of the cooled white chocolate, then add the coconut and mix together.

Divide the mixture between the 12 cases and bake for 20 minutes.


For the icing, soften the butter before adding the icing sugar and mixing until it's smooth. Add the white chocolate and a tablespoon of milk, then pipe the icing onto the cakes.


Sprinkle a bit of coconut on top of the icing to finish.
