Marshmallow Cupcakes

Cakes make great presents to give; whether it's saying thank-you or for someone's birthday they always go appreciated. They're a bit different from the generic bar of chocolate, can be personalised and are fun to make. These gooey marshmallow cakes make the perfect little extra gift to give someone, and as the recipe makes 12 there's enough to keep some back for yourself...




Recipe:
  • 140g caster sugar
  • 1 1/2 teaspoons of baking powder
  • 120g plain flour
  • A pinch of salt
  • 45g margarine
  • 1 egg
  • 120ml milk (I used skimmed but any sort will do)
  • A drop of vanilla extract
  • 100g marshmallows
 For the frosting:
  • 200g icing sugar
  • 40g margarine
  • A drop of vanilla extract
  • 200g mini marshmallows to decorate

Pre-heat the oven to 170Âșc.

Mix the flour, sugar, baking powder, margarine and salt in a food processor.

Gradually add half of the milk, then mix, then add the rest along with the vanilla extract and egg and mix again.

Spoon the mixture evenly into cases and bake for around 25 minutes.

Melt some marshmallows by putting them in a bowl over simmering water.

Cut a hole out of the middle of the cooled cakes, and spoon in some of the melted marshmallows. Place the cored bit of cake back on top of the marshmallow and press down. 

Make the frosting to put on the cakes- I added a tiny bit of red food colouring to make the icing pink. Finish off by decorating them with a few mini marshmallows on top.
