Fudgy Rocky Road



Hi! There's been a bit of silence from me over the past couple of weeks as I've been away on my (late) summer holiday; life was super busy in the run-up and I just didn't have the energy/ wasn't organised enough to schedule any posts for while I was away. Hey ho, these things happen! I've not  long been back in the UK (literally a few hours) but really wanted to share this recipe. I made this batch of rocky road a few weeks ago and OHMYGOD I cannot wait for an excuse to make it again- that's the sign of a winning recipe!

Don't get me wrong, I love baking. But there is a lot of scope for things to go wrong when you have to precisely measure things and involve an oven. I'm definitely a 'chuck things into a bowl and hope for the best' kinda gal, so this rocky road recipe is right up my street. No baking necessary (the fridge does all the hard work), minimal ingredients and a deliciously chocolate flavour that just melts in your mouth.




It includes all of your standard rocky road ingredients (chocolate, butter, marshmallow, biscuits, and more chocolate), but I decided to also chuck in some salted caramel fudge pieces for good measure. I spotted the new baking goods in Aldi (possibly one of their Special Buys...I can't remember as I just grabbed multiple packets in excitement and ran for the tills) and knew they'd fit perfectly into this recipe. It went down a treat with Stewart's police colleagues on their long night shift; I left a few aside for myself but they had mysteriously disappeared by the time I got home....living with boys, eh?! The recipe it makes 20-ish pieces (depending on how big you cut them) so you'll need a large baking dish. The only bad thing about this recipe is that it's best to leave them overnight to set in the fridge....I'm too impatient for that!




Ingredients

125g butter (or baking spread)
300g dark chocolate
3tbsp golden syrup (or honey if you don't have any syrup)
200g biscuits (rich tea or digestives)
80g mini marshmallows
30g fudge pieces (this is approx- the packet weighs 100g and I chucked a good portion into the mix. You can add more or less to suit your taste!)




1. Lightly grease and line a large baking dish with baking parchment.

2. Break the chocolate into pieces and melt this together with the butter and golden syrup in a heatproof bowl over a simmering saucepan. You can also melt them together in the microwave- use a low heat and check on it every 30 seconds or so, stirring each time.

3. Once these have melted together and combined, pour just over half of the mixture into a separate, larger mixing bowl and set both chocolate-filled bowls aside to cool slightly.

4. In the meantime, pop the biscuits into a freezer bag and seal- then bash them with a rolling pin to both break them up and simultaneously have a therapy session whilst you cook. You want there to be some crumbs and some larger pieces to give the rocky road some texture, so don't go too wild with the crushing.

5. Fold the biscuit into the chocolate mix that was poured into the larger bowl, and also add the marshmallows and fudge pieces. (Side note: you could also add pieces of your favourite chocolates, such as the 'bite size' pouches or some dried fruit to jazz things up if you don't fancy fudge).

6. Once this has all been gently folded, pour the mixture into the baking dish and smooth it out so it falls evenly across the dish, making sure to pack it in and press into the corners. Pour over the remaining chocolate mix (the one in the original heatproof bowl) and again just smooth over the top, making sure the dish is evenly covered.

7. Pop in the fridge ideally overnight, but if you really can't wait that long a few hours should do the trick. Once completely set, cut into squares and serve. These should be kept in the fridge...and I'm not sure how long they last because they were gone within a day when I made them!
