Recipe: Delicious (And Healthy) Banana Bread
According to science, your tastebuds change and regenerate every 7 years. I used to hate banana flavoured things, turning my nose up at the thought of banana muffins and the like. However, my taste has recently changed and I've started experimenting with different recipes for banana bread, having suddenly realised how amazing it is. Taking after my Dad, a nice loaf of banana bread has quickly climbed the ranks of my favourite bake. There's nothing better than cutting a slice whilst it's still warm from the oven and slathering some butter across it. Butter, sugar and more butter is how it usually goes. However, when you're trying to watch what you eat, this isn't necessarily the best option. I wanted the same comforting indulgence of banana bread without having the guilty feeling afterwards, so concocted this healthier alternative. Although it's still 230 calories per serving, it contains ingredients that are generally better for you whilst still retaining that sweet taste.

I'm a massive chocoholic, and Oreo flavoured things are just the best thing on earth, so combining this within a cake recipe is a fantastic thing for my taste buds. What's even better is that this recipe is so easy to follow; they may look like chocolate cupcakes with a fancy upgrade, but they are just as simple to make. While this recipe tops off the cakes with a cream cheese frosting, you can opt for buttercream if you prefer- I find that cream cheese does lighten the flavour of an otherwise heavy chocolate cake though. Coffee and Walnut Layer Cake
Unfortunately the hectic university schedule has meant that I haven't been able to blog for a while, but when I popped home last weekend I managed to fit in a spot of baking. My grandad has been a bit under the weather recently so I thought I'd make him his favourite cake; coffee and walnut. However, instead of making the traditional type where everything is mixed into the same layer, I thought I'd separate the cake into three different layers of coffee, walnut and vanilla. As a result, when you cut through the cake you can see the defined layers in each slice, with each layer sandwiched with coffee buttercream.
Gooey Chocolate Cake
For my brother's sweet 16th birthday this year I made this lovely, rich chocolate cake. I never normally make chocolate cakes as they usually turn out too dry, but recipe was quite moist. I tried putting around 75-100g of mini marshmallows into the mixture to make it even more sweet and gooey but I'm not sure it made that much of a difference to the cake.
Fresh Fruit and Cream Sponge Cake
I initially made this cake for my brother's birthday. Trotting down to my local fruit market, I picked up a range of strawberries, raspberries and blueberries in hope that I could try and make a birthday cake 'healthy'. It's made with a light sponge, allowing for a slightly heavier layer of whipped cream and heaps of fresh fruit, making it. Doubtless to say, as soon as the family came round it vanished- my brother (birthday boy) didn't even get to have any and I had to make yet another cake to make up for it. Tsshh.
