At the moment, as you might be able to tell, I'm trying to get creative and concoct some of my own cake recipes. After compiling a long list of random ideas, I made these lemon and poppy seed cupcakes. In this recipe, I used quite a lot of poppy seeds, but if you wanted to tone it down a bit anything from 25g to 50g would be fine. The recipe makes about 12 cupcakes.
Coconut & White Chocolate Cupcakes
I made these white chocolate and coconut cupcakes the other day as part of my continuing recipe experimentation. I didn't think they would be but these cakes are really sickly...maybe I put too much chocolate in them! The recipe makes 12 cupcakes.
Skin Art: Birds and Clouds
Noticing that I had some Skin Art nail stickers left over, I thought I'd create this look. They make for a fab nail accessory and they actually lasted a lot longer than I expected.
Lemon & Raspberry Cupcakes
Ever since I was little it's been a family tradition to go strawberry and raspberry picking. Each summer, as soon as the strawberries come into season, my nan and I take a trip to a local 'pick your own' farm and fill countless punnets with fresh strawberries and raspberries.
Marshmallow Cupcakes
Cakes make great presents to give; whether it's saying thank-you or for someone's birthday they always go appreciated. They're a bit different from the generic bar of chocolate, can be personalised and are fun to make. These gooey marshmallow cakes make the perfect little extra gift to give someone, and as the recipe makes 12 there's enough to keep some back for yourself...
Stawberry Cheesecake Cupcakes
These little cupcakes are such a good idea if you have people over in the summer; they're sweet, indulgent but surprisingly light and fresh too. It's best to use fresh strawberries in the bottom of the case, then put the sponge mixture on top. The recipe makes about 12 cupcakes... plenty to go around!
